Salmon Cake

I stumbled upon a wonderful blog called onceuponacakestand by a Swiss author...you much check it out. I tried to contact her re publishing her post but didn't get an answer. All the credit must go to Myriam of Zurich. And don't forget to check out her blog! Its amazing! I never thought of making a cake using salmon but its delicious with cream cheese!
Savory Salmon Cake

Ingredients:180g flour
15g baking powder
3 eggs
100ml sunflower oil
100ml milk
120g gruyere cheese, freshly grated
120g smoked salmon, cut in small pieces
1 generous handful of fresh dill, finely chopped
2 tablespoons of coarsely ground pink pepper
salt and freshly ground pepper
heat the oven to 180 °c.

Method
Butter a bundt tin (25cm) generously or line with parchment paper. (or use individual ramekin type bowls)
Beat eggs, milk and oil in a bowl. mix flour with baking powder and grated cheese and put in another bowl. 
Add salmon, dill and pink pepper. add liquid and mix, then season with salt and pepper.
Put into the prepared cake tin and bake in the middle of the oven for about 50 minutes, then let cool for about 10 minutes, then turn over onto a cooling rack.
Slice and serve with  cream cheese or ricotta  seasoned with some lemon juice and chives.
