Ripe bananas? make Bread!!

This is a great way to use up any over ripe bananas!
Ingredients
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1/2 tsp vanilla essence
  • 1/2 tsp salt
  • 3 medium bananas, mashed (about 1 cup)
  • 1 1/4 cups sifted flour
  • 1 tsp baking powder
  • 1/2 cup chopped pecans
 
Method
Mix sugar, oil, eggs, salt vanilla essence and mashed banana. 
Add baking powder to flour and sift; fold into sugar mixture. Do not overmix. 
Add nuts. 
Turn into lightly greased and floured bread pan. 
Bake at 350 degrees about 40-45 minutes or until a knife put in comes out clean
