Turkey Meatballs

Mum has been complaining that my recipes are too fattening! I came accross this baked turkey meatball recipe that is healthy, easy to make, and tastes really good!!
Makes 12 meatballs

Ingredients
1lb ground Turkey
1/2 cup grated carrot
1/2 cup grated onion
1 tsp fresh thyme
1 tsp grated lemon rind
1 tsp finely chopped fresh parsley
1/4 cup fine breadcrumbs
1 egg, beaten
dash of worchestershire sauce
1/2 cup white wine
Salt and pepper to taste
Grated parmesan cheese
Olive oil (to grease baking dish)

Method
Preheat oven to 350F
Lightly oil a baking dish.
In a large bowl  mix all  the ingredients except for the Parmesan cheese and olive oil.
Make about 12 meatballs, rolling them in your hands (this is the fun part!)
Put the meatballs in the greased dish
Cover with foil and bake for 40 minutes. After 40 minutes remove the foil and continue baking for an additional 15 minutes.
Sprinkle with the cheese and eat!!

You could also make a tomato sauce to go with them, make them smaller and use as meatballs and spaghetti, serve them cold with a salad etc etc etc!
